Could anyone help advise on the simplest route to make a fit-PC, any OS, a simple smtp mail server for a small Lan. I have a device that hands over an email to a mail server and want this to be local and not my ISP's mail server. Thanks.

There are a lot of howtos on internet depending on your distribution. I installed arch linux on my fitpc2 and followed the wiki page on wiki.archlinux.org.
